Alanis Stansberry, a student in our PhD in Nutrition Sciences program, developed recipes for individuals with common chronic illnesses utilizing foods available in Live HealthSmart Alabama’s (LHSA) Mobile Market. The project was for her service as a 2023-24 Alabama Schweitzer Fellow (ASF). And because of her efforts, the Mobile Market now has recipes that can be used by individuals with type 2 diabetes, hypertension, and high cholesterol.
During her Fellowship, she received guidance from her academic mentor, Camille Worthington, Ph.D., and her site mentor, Lemeisha Chambers, Ph.D., the operations director for LHSA. Stansberry was one of several who nominated Chambers for the Outstanding Site Mentor award – which she won – calling her “a wealth of knowledge in regard to the operations of the Mobile Market as well as the characteristics of the intervention population.”
